I have used this cake batter recipe 3 times- Funfetti cupcakes, 3 musketeers filled cupcakes, and Banana cream pie cupcakes.
While my original homemade funfetti cupcakes are outstanding, I wanted a fluffier, whiter, and cakier cupcake that is still as simple as my original recipe.
I’ll be doing a post on my method of making cake pops from scratch and would to direct people to your recipe for the the batter.
I used goat’s milk plain yogurt, which is normally a bit tangy on it’s own, unsweetened vanilla almond milk, cake flour (the second time around, but cake flour or white, both were great and I couldn’t choose which time was better), and long sprinkles that I got from a local ice cream shop.

 While I’m dreadful at baking anything that ends up looking attractive, I have become quite good at dressing up something ugly so that it appears to be something it is not.
 So I have no idea what came over me when I decided to make the cupcakes for Tom’s very small birthday celebration.

 And so they were!  I’m a sucker for a gingham and thought the pattern went well with the toppers I had already created.
 I decided I’d make my own baking cups in which to set these lack-lustre cakes.
 And now when Tom looks back at his second birthday, he won’t see those sad little excuses for cupcakes.
 That is why I typically buy all cakes and/or cupcakes for my kids’ birthdays.
 And, yes, they aren’t super professional looking (that droopy icing), but I kinda like that about them.
 I pulled the top ply of the napkin apart from the others so that I was only working with one layer of the napkin.
 I think it was the fact that I couldn’t find anything that I liked at the local grocery store.

I’m so happy you posted this! My mom asked me to make her wedding type cake for their 50th anniv and I have been on a hunt for a good, easy buttercream recipe! The one I used the last time wasn’t right.
I think Rose Levy Beranbaum (“The Cake Bible”) always said to focus on the frosting over the cake, though homemade cakes are just as good.
I come from a line of butter-lovin’ women so to me, canned frosting tastes like bug spray! Homemade chocolate cakes are very easy and come out tasty and moist.

You’ve made me droooool for cupcakes now! I’ve made my own frosting one time back at Christmas because I’m trying to get away from all the weird ingredients in packaged food, too.
I prefer the taste of homemade better than canned, but I’ll have to say canned frosting is MUCH better than it was 25 years ago, and since I shop sales with a coupon, it is usually cheaper than homemade, so I use it much more than I used to.

I ended up using a DH 16.25oz white cake mix and following all the other measurements as listed and they turned out AMAZING! I somehow managed to squeeze out 40 cupcakes, took 2 dozen in to work and they had disappeared by noon! Not bad for the first time trying out a recipe.

I just made these this morning and they are very delish! I’m making cupcakes for a baby shower this weekend, and this is exactly what I had in mind when they said “white cake”…so super moist! Since this was a trial batter, I played around with some flavors with the extra batter…added lemon zest and fresh lemon juice, and baked as mini bundts for my husband.

I’ve made cupcakes with this recipe multiple times and they always come out FABULOUS! Being from Alabama, football is a big part of our weekends and I always make these for tailgating at Auburn (War Eagle!) and I usually color the cupcakes and frosting to match the team colors (orange and blue).

We made a pink ombré layer cake using Gel food coloring and this recipe held up well to all the extra mixing to get the different shades of pink.

So, I substituted a German Chocolate cake mix into your recipe and as I was mixing and saw the weak chocolate color, it occured to me: “Your diluting the chocolate flavor that’s in the cake mix by adding these extra ingredients.” So, I added a couple of heaping teaspoons of cocoa and once I spooned the batter in the liners, I sprinkled 4 or 5 semi-sweet chocolate chips on top before baking and they were PERFECT! I was not surprised.
I’m sorry- I don’t know anything about the cake mix brands outside the US, but yes… the recipe is for a “jazzed up cake mix”- one that is meant to just add eggs, water and oil normally but my added ingreds here make it taste better.
I made this with a duncan hines cake mix which was smaller than the recipe stated.
The recipe makes 36 cupcakes, so it’s like making a cake and a half (3 9-inch rounds).

I’ve made the icing recipe before with great luck and loved it, but this time I messed it up.
I used this recipe today for some Pink Lemonade cupcakes and White cupcakes, both made from a Pillsbury mix.
The cupcakes made using Duncan Hines were far superior to a batch we made using a generic cake mix.
Okay…I just made them! Delicious! I’m sure the original with sour cream is better, but the way I had to make it was great as well! I made buttermilk with rice milk (1TBSP white vinegar and add enough rice milk to make 1 cup total)..I let it sit for about 30 minutes to thicken, to which I don’t think it really did, but I had to try anyway! Then when it came time to add the sour cream I added 3/4 of the rice milk buttermilk and 1/3 cup dairy free margarine.
Amber- I’ve never tried the recipe with another kind of cake mix, but I don’t think it would make a difference.

I didn’t take photos of the frosting recipe because I’m forgetful, but it’s just the basic cream cheese frosting I use for cakes, cupcakes, and moisturizing my skin.
$3.75 for a single Cupcake! And it was SMALL! So I went to the store, bought a cake mix, called my 17-yr old son and asked him to look up a Ganache recipe, bought the choc &cream, etc went home and made bunch of cupcakes for a few bucks.
