[…] Perfect Simple Vanilla Cupcake from Baking A Moment – an essential recipe for a classic vanilla cupcake.
My Simply Perfect Vanilla Cupcake recipe has been one of the most popular (and commented upon!) posts on Baking a Moment, since it was published back in July.
1) I love how amazingly moist and fluffy it is – have searched around for the perfect basic butter cake recipe, and this is IT.

Sort of a silly question, but I have to ask: where did you buy or what brand are the sprinkles you used to top the cupcakes with? I noticed that there aren’t the brown colored ones included in those, and have been searching for them everywhere! I love sprinkles and funfetti, but for some reason the brown ones drive me crazy.
I love homemade funfetti cupcakes and just made some for my birthday.
A homemade version of funfetti cupcakes – buttery vanilla cupcakes loaded with sprinkles and topped with vanilla buttercream frosting.
I was hesitant to use cake flour because other cupcakes I made with cake flour before had an awful texture, but these came out great! I halved the recipe (it made 15 cupcakes).
I can see why the funfetti concept is so popular – who doesn’t love bright colors and sprinkles?! It’s so festive and fun and totally appropriate for any birthday party (kids or adults, I say).
If you want to get even more “from scratch” with this recipe, Food52 just had a recipe a couple of weeks ago for homemade sprinkles – – haven’t tried it yet but it looks super easy and I’m sure they’ll taste awesome.
Sprinkles really? I am pretty sure around here those things are called jimmies!! Great recipe – I can’t wait to bake these cupcakes.
As always, such stunning pictures you have! Your funfetti cupcakes are gorgeous! I do love funfetti – such sweet indulgence that reminds me of being a kid.
Truth is, funfetti are totally easy to make right at home, all you need is a basic vanilla cupcake recipe and some rainbow sprinkles.
In our house “cake mix” is a four letter word so my son was shocked to see funfetti! One taste and you know without a doubt they’re from scratch! Thanks so much for sharing this recipe.

Does this recipie work for cake pops? My boyfriends birthday is coming up and I’m trying to decide if I wanna make him cake pops or cupcakes.
Hi, Love this recipe but how many calories is each mini cupcake with and without frosting.
Hi – I am going to try your vanilla cupcake recipe for my daughter’s birthday party this Sunday.
These look amazing! I haven’t seen vanilla cupcakes with all whole wheat flour.
Here you can see the mini cupcakes right before being baked and right after, 10-12 minutes is what you actually need to bake these.
I just made these as full size cupcakes and they did not turn out flat on the top like yours.
For the frosting, mix all of the ingredients ( I normally use a hand mixer when doing this) and frost cupcakes.
You can decorate them how ever you like and if you want you can also make them on regular size cupcakes.
The major reason I make my own sprinkles is because I hate the waxy taste regular sprinkles have, plus lets not forget they are made with trans fats (hydrogenated fats).
You can also see some sprinkles on the mini cupcakes.
One tip I want to share with you is, after the cupcakes have cooled down completely you can actually freeze these for future use.
These mini cupcakes are great for birthdays, gatherings, giveaways etc.

I’m so happy you posted this! My mom asked me to make her wedding type cake for their 50th anniv and I have been on a hunt for a good, easy buttercream recipe! The one I used the last time wasn’t right.

Just made this frosting along with the chocolate cake recipe in Saralyn’s comment.
You’ve made me droooool for cupcakes now! I’ve made my own frosting one time back at Christmas because I’m trying to get away from all the weird ingredients in packaged food, too.
I prefer the taste of homemade better than canned, but I’ll have to say canned frosting is MUCH better than it was 25 years ago, and since I shop sales with a coupon, it is usually cheaper than homemade, so I use it much more than I used to.
How many cupcakes will this cover? I am making about 60 cupcakes for a benefit we are having to raise money for a friend that was in a wreck and I would love to use homemade frosting rather than in a can.

Add the paste from the vanilla bean (or the 1 tablespoon vanilla extract if you don’t have a bean) into the sugar mixture, followed by applesauce, egg, egg yolk, and the teaspoon vanilla extract.
With the mixer on low, alternately mix in the dry ingredients and 1/2 cup evaporated milk, starting and ending with dry ingredients and scraping the sides of the bowl as needed, until just combined.

The original recipe suggests you bake the cupcakes for 20-22 mins, but with Splenda, the time needs to be decreased by about 10 minutes, as the Splenda cooks faster than regular sugar.
Use the recipe right from the Pure Vanilla book, but swap the sugar out equally with Splenda.

Sure, you can add sprinkles to a vanilla cupcake mix (this turns them into Funfetti cupcakes) or chocolate chips (which makes them chocolate chip cupcakes), but crushed up chocolate? Yes, it is possible – if you follow this recipe.
