A one-inch (2.5-centimeter) thick steak will take about four minutes for rare steak and about 10 minutes for a well-done steak.

It’s especially important if you prefer a more thoroughly-cooked steak, because, if it’s cold on the inside, you might well burn the surface, before you get it to medium-rare/medium level of doneness.
A dry surface becomes brown much easier, so pat drying the surface of steak is a good idea.
I never add pepper (just don’t like it), but Heston Blumenthal, for example, says that adding it before high-heat temperature treatment will make it burnt, adding some charred flavor.

Fat Guy’s interpretation of Ducasse’s method cooks the steaks for 10 min per side on a 170F pan (jackal10 calculation), which i believe, should the steak have not been so marbled, will yield a area of "greyness".

We’ve browned our edges and cooked one side of the steak in a mixture of beef fat and butter for 10 minutes over medium heat.
A lot of people recoil at the notion of using butter as a cooking fat with steak, but I’ve found that butter has two excellent properties: 1- butter, more than most any other fat I know of, is a huge aid to the Maillard reaction, and 2- the combination of butter and beef fat makes a tastier cooking medium for steak than oil.
But isn’t this method just a reverse derivative of the classic method? Both uses high heat for a short time to brown the surface and gentle heat to cook the steak through.
The goal was to get a beautifully juicy, tender steak (rare, roughly 120-125 degrees) without cooking through the roughly quarter inch surface of the steak which you typically get when cooking steak over high heat using only a skillet or a grill.

As Alain Ducasse noted in the New York Times in 2002 (article here, discussed here), the standard American method of preparing steak involves high heat.
I believe Ducasse recommends only adding the butter towards the end of cooking, but I think the steak comes out a little better when you use butter all the way through to coax a little more of the Maillard reaction from the steak.
The way I prefer to do this, which is not exactly the same as how Ducasse recommends in the Times but is something I’ve seen done in restaurant kitchens, is to dump out enough of the beef fat so that there’s a thin coating of it left in the pan, plop the steak on its flat face, and add a couple of tablespoons of butter.
My guess is the centre as lower, more like 135F; the steak about an inch and a half thick; working backwards assuming ten minutes cooking a side gives a pan surface temperature of about 170F.

I just “love” when someone posts a good recipe then has people comment with ‘you should have” or “why didn’t you”??? Good technique for cooking a steak that tastes like a good steakhouse piece of meat.
I use my iron skillet to cook steak but I put it into a cold oven, set the oven to 400 and when the oven is at temp the skillet is hot enough.
these steaks were perfect and tasted better than any other steak i’ve had at home or in a restaurant by far!!!! i didn’t even have to use any sauce at all.
I did marinate the steaks for a couple of hours first then cooked on both sides in my iron frying pan then transferred to 450 degrees hot oven for a total of 8 minutes.
Best method is have a thick steak, preheat the skillet and melt the butter but not so hot the butter burns.

Based on reviews, looks like the coconut oil makes the steaks catch fire, so we thought of substituting with olive oil.

Sadly, I put the pot of soup into the back of my car and forgot about it as the day of responsible planning and organization turned into an afternoon and evening of hanging out in local pubs with our friends and watching the football game at a friend’s house.
In this week’s edition of 30MM (<– see what I did there?) I’m sharing my recipe for Easy Tuscan Bean Soup with you.
I had to hurry to get out the door and bring a big pot of this over to Kristen’s house the weekend before her wedding to help iron out some last minute details and spend some quality time with our friend Michele.
It’s a basic soup made from vegetables, broth, beans, and a little olive oil.

The sauce that I made for this halibut was based roughly on that Thai sauce recipe, with the exception of wine, and the addition of field tomatoes.  Part of what makes this sauce so good is mixing Asian and Western ingredients together, as in the chili garlic sauce with wine (or in this case, chicken stock and lime instead of white wine).
