For a kicked up leftover turkey sandwich that doesn’t taste too much like Thanksgiving – turkey, Monterey jack cheese, sliced jalapeños, sliced tomatoes and mayonnaise grilled on sliced sourdough.
Grill Raclette cheese and a drizzle of honey on sliced French bread for an incredible sweet and savory combination.
Simmer shredded leftover (or rotisserie) chicken in barbecue sauce, grill with fresh mozzarella and caramelized onions on Italian bread.
Layer herbed cheese slices with oil-packed sundried tomatoes on country bread and grill under the broiler.

Everything from cracked wheat bread, flavored corn or flour tortillas, croissants, pita bread, ciabatta and other artisan breads, and even cracker bread and boboli pizza crusts can be used to make imaginative sandwiches.
But an ordinary skillet or griddle will also work well – you can press down on the sandwiches by placing another heavy skillet on them while they’re cooking to crisp the bread and press the sandwiches together.
